Chilli Baby-Corn


Hi

I was wondering what i could prepare for day 5 of BM#4- an event by srivalli.I could not bake anything yesterday as we have a power shut down in Chennai. Can you imagine our plight........Summer and no Power.......Let alone bake anything, i did not even cook properly!!!!The time between Morning 9 to evening 5 seemed to stretch endlessly.Every now and then i looked up at the fan but it glared back at me dumbly.....Na......i guess it thought i was dumb enough to look at it when there was no power....GOD!!!!!!!!look at me !!i have started talking with the inanimate things around me....hmmmmmmm i guess i am so addicted to this called ELECTRICITY!!!!and without that I AM LOST!!!!! well, When finally the fan moaned into motion i decided to cook some quick snack and Vibha was very happy to see me picking up the baby corn.I had bookmarked this recipe and have tried this many times. This recipe is definitely a keeper

INGREDIENTS

Baby corn 200 gms

Onion 2 medium

Green Capsicum 1

Garlic ginger paste 1 tsp

Green chilli paste 1 tsp

Tomato sauce 2 tbsp

Soya sauce 2 tsp

Corn flour 1 tbsp

Spring onion white 1/4 cup

Spring onion green 1/4 cup

Vinegar 2 tsp

Brown sugar 1/2 tbsp

Oil 2 tbsp

Salt to taste

FOR THE MARINADE


Black pepper powder a pinch

Ginger garlic paste 1 tsp

Corn flour 1 tbsp

Water 3-4 tbsp

Salt to taste


PREPARATION

Cut the baby corn into 1' pieces.

Slice the onions very thinly. Cut the capsicum into thin slices. Chop the spring onions likewise

Marinate the cut baby corn in the ingredients listed below MARINADE for 10 minutes.

Heat a pan with very less oil and , Place the marinated baby corn next to each other and shallow fry them.Remove and keep aside.

In the same pan add 1 tbsp of oil and saute the onions. When they turn transparent add the ginger garlic paste.Add the chilli paste and fry.

Now dunk in the cut capsicum and fry for 2 minutes. Add the sauces and fry on high flame.

Now add the fried baby corn and salt and mix well.Add the Spring onion green and fry for another 2 minutes taking care not to burn the veggies.
Mix the corn flour in 3-4 tbsp of water and pour it into this. Mix well and cook for another 2 minutes.
Switch off the stove

Serve warm


A very appetizing and delicious snack ready in a jiffy.

    How are you? Reading your blog I remember my friend used to say the famous proverb " Madras has 3 seasons hot, hotter and hottest" . Jokes apart , I can understand your plight and waiting for 46 deg C with power cut.:-(
    I like this recipe , very nice, I must try and pure vege way for sure.
    Let me see what all have I missed.
