Potato Baskets with Corn Filling


This month the challenge from Daring cooks was to make edible containers.Renata of Testado, Provado & Aprovado! was our Daring Cooks’ April 2011 hostess. Renata challenged us to think “outside the plate” and create our own edible containers!Since potato is my daughters favourite i wanted to cook these potato baskets. A very easy dish to cook but need to be careful while frying
INGREDIENTS


For the basket

Potatoes 4 medium

Corn starch 2 tbsp

Oil for deep frying

For the filling

Fresh corn 1 cup

Butter 1 tbsp

Salt to taste

Lemon juice few drops

PREPARATION

For the basket

Was and peel the potatoes.

Grate them, squeeze out the water completely, add the corn starch and mix well


Heat the oil in the frying pan. Take out a metal Tea strainer. Dip it in hot oil. With a spoon spread the grated potato mixture all around it.

Be careful as the strainer will be very hot..Press another stainer into this. The potato will be sandwhiched between two strainers.


Now place this in the frying pan.


After 3-4 minutes take it out and keep it on a plate.Carefullyu lift the top stainer. Tap the other stainer on a flat surface. The potato basket will drop off easily.


For the filling


Cook the corn till done. Add butter, salt and lemon juice. Mix well


Assembling the basket

Keep the baskets ready. Fill it with the corn filling or filling of your choice. Serve warm .Kids are sure to love it.
