As i was wondering as to which vegetable I could use to cook soup for DAY6 of Blogging marathon, My friend Uma suggested that I should try out this soup as it could add to my colour Palate of soups:-)Well, i knew that it would be nice if she suggested it. So without any delay , i tried this out and I must say..."Uma..It is indeed very tasty with a lovely colour as well"!!
INGREDIENTS
Yellow bell pepper 2(chopped)
Carrot 1 (chopped)
Potato 1(peeled and chopped)
Bay leaf 1
Milk 1/4 cup
Salt to taste
PREPARATION
Transfer all the chopped vegetables along with the bay leaf with enough water (just soaking the vegetables) to a cooker and cook up to 2 whistles. Let it cool
Blend only the vegetables. Keep the extra water aside in the pressure cooker itself
Now transfer back the blended puree to the cooker with the water and mix well.
Add the milk and mix well. Now add the necessary salt to this
Simmer it for 7-8 minutes.
Serve warm.........It is truly very tasty!!!
