Kanda Poha

There is no respite from rain in Chennai....much needed for the scorching heat though!!!!I hadd to get a quick eat for everyone for the weekend evening and Kanda poha is a quick eat and can be had without any guilt:-)

INGREDIENTS
Beaten rice flakes/Poha/Aval 1 cup

Onion 1( cut finely)

Green chillies 3( cut into very small pieces)

Coconut scrappings 2 tbsp

Sev 1 tbsp

Mustard seeds 1/2 tsp

Lemon juice 1 tbsp

Salt to taste

Oil 2-3 tsp

PREPARATION
Soak the rice flakes in enough water for 10- 15 minutes. Sqeeze it and keep it aside

Heat a pan with oil. Temper with mustard seeds. When it crackles add the cut onions and chillies and saute well for 5 minutes in medium flame.

Now add the turmeric powder and mix well. Transfer the rice flakes to this and mix well. Sprinkle the salt, mix and continue to cook for another five minutes.

Switch off the fire. Mix the lemon juice to this

Transfer it to a serving plate. Sprinkle grate coconut and sev on this and serve

  4. kande pohe are usually associated with bride groom hunting in maharashtra, luckily i was spared of it but this was the first dish i prepared post marriage for housefull spectacle. Like your picture
