The very thought of baking these savoury cookies made my mouth water. I can remember my school days when i would wait for saturday and my father would buy these yummy crunchy and buttery cookies from the famous Iyengar Bakery!!!!I baked these and can say that these cookies have the same texture and taste that I had tasted in the Iyengar Bakery.
INGREDIENTS
The original Recipe is here
All purpose flour 1 cup
Butter 4 tbsp
Salt 1 tsp
Sugar 1/2 tsp
Sesme seeds 1 tbsp
Coriander 1 tbsp(cut into very small bits)
Curry Leaves 1 tbsp( cu into very tiny bits)
Green chilles 2( cut very finely)
Milk 1/4 cup
PREPARATION
Preheat the oven to 180C
Line a baking tray with butter paper and grease it with butter
Mix the flour and butter in a bowl till it resembles bread crumbs.
Now add the sugar and salt and mix well
Now add the coriander, curry leaf , chillies and sesame to this and mix well.
Add the necessary amount of milk to knead this into a dough
Dust the work surface and roll this dough into a rectangle 1/4" in thickness.
Using a cookie cutter or just a knife cut out shapes from this dough.
Place these cookies in the prepared sheet and bake for 15-20 minutes.(Mine was done in 18 minutes)
Take it out and let it cool for 20 minutes
These cookies become crisp only after cooling them.
Taste awesome with a cuppa!!!!
