Oven Roasted Arbi - Sepankizhangu Roast

Sepankizhangu/Taro Root or Arbi is very tasty as a curry and tastes the best when it is roasted in a hot oven. Since the usage of oil is very less , you need not feel guilty of that deep fries arbi.
INGREDIENTS
Arbi/Sepankizhangu 1/4 kg
Oil 2 tbsp
Asafoetida 1/2 tsp
Turmeric Powder 1/2 tsp
Chilli Powder 1-2 tsp
Salt to taste
PREPARATION
Pressure cook the vegetable upto 3 whistles(soft but not mushy)
Cool it and remove the skin.
Cut the root into smaller pieces.Mix the turmeric,Asafoetida,chilli powder 1 tbsp of oil and salt to this You can put all these into a ziplock cover with the vegetable and shake it to give a nice mix. I just Mix everything in a plate
Preheat the oven to 200C
Line a baking tray with an aluminum foil.
Grease this foil.
Transfer the vegetable to this tray and sprinkle a little oil on it. Bake for 20-30 minutes till you get a nice golden coloured crunch
Serve with a Rice of your choice or just at it like that:-)
My daughter loves the combo of Puliyogare and this roast.
