Carrot Almond Ginger Soup
This month for Magic Mingle Kalyani selected almonds and ginger as the two core ingredients.Since we like carrot soup I thought This would be a tastier version with those crunchy almond flakes and the flavour from the ground ginger .So here goes my soup with the magic ingredients
Almonds 1/4 cup+1 tbsp
Ginger 1" piece
Oil 1 tsp
Salt to taste
Soak the almonds in water for 1/2 hr and remove the skin.Slice only 1/4 cup of almonds. Reserve the rest
Slice the onions.
Peel the potato
Heat the oil in the pressure cooker and saute the onions till they become transparent
Now add the potato, carrot to this with enough water and pressure cook it till 3 whistles . Switch off the fire and cool it.Once completely cool add the reserved 1 tbsp almonds and ginger to cooked vegetables and grind it into a smooth paste.
Transfer it back to the pressure cooker. Ad more water to get the required consistency and mix well. Now add the sliced almonds to this and cook in a very low flame for 5 minutes
Serve hot with a dash of fresh ground pepper to it.
