I can't believe that we are already into the third month of this year!!It is march .....And the second posting for "THE GOURMET SEVEN". And for this month we have selected "Salads"from 101 Cookbooks as our theme. Now, Now...I know you are murmuring as to "WHY SALADS?"Well!Let me assure you that this is just not cutting some bland vegetables and tossing it together with salt and salad oil. Remember In my Introductory post I had mentioned that we would get out of our comfort zone to cook Gourmet style and we shall be tossing our salads in gourmet style too:-)I guess it is enough of my talk for this post and let us jump to the recipe now!!!
INGREDIENTS
Recipe Source. I have tweaked!!!
Potatoes 4(medium sized)
Pumpkin few pieces(with skin)
Scallions 4
Lettuce 2-3 leaves
Salt 1-2 tsp
Olive oil 1 tbsp
Lemon 1
PREPARATION
Wash all the vegetables well. Let them dry.
Cut the potatoes into quarters
Cut the pumpkin into smaller pieces but leave the skin on
Cut the scallion into 2" pieces. This way it is easier to eat
Toss all the vegetables into a bowl with the olive oil and salt
Preheat the oven to grill
Oil the tray well. Spread these cut vegetables evenly on the tray. Make sure that the pumpkin has its skin on the top.
Cut the lemon into two pieces and again let the cut surface tough the tray(skin above)
Grill for 15-20 minutes
The scallions may start browning at 7 minutes , so I prefer to remove them then.
Let the vegetables cool
Arrange these grilled vegetables on fresh lettuce. Squeeze the grilled lemon to this.
Serve the very deliciously different salad!!!!!!

You can't expect to get more out of the comfort zone with this grilled salad. Pumpkin and potato combo sounds so swell.
