Carrot Curry




My daughter tends to avoid eating this vegetable in the salads and i always need to find a way to sneak in this in some other way in her regular diet.One such dish which she like is this curry.
INGREDIENTS
Carrot     1 cup(cut into cubes)
Onion     1 cut lengthwise
Oil          1 tsp
Mustard   1 tsp
Green chillies  1(cut very finely
Asafoetida       a pinch
Salt                to taste
PREPARATION
Cut the carrotsinto even sized cubes. Cook in microwave for 5 minutes with a lid closed in MICRO HIGH MODE.
Cut the onions and chillies finely
Heat the pan with oil. Add  the mustard seeds. When it splutters, add the asafoetida, green chillies. Saute for a minute. Now add the cut onion and saute till it becomes transparent
Now put the cooked carrot in this, mix well. Add salt. mix well , cook for a minute and switch off the fire.
If you want the curry to be more spicy you can add 1tsp of chilli powder while adding salt.

  2. This should taste good..even I am not very fond of carrots except of course in halwas..but with onion it will surely taste good.

  6. My husband likes carrots in salad but doesn't like it in curries.. :) However, I do make it once in a while. Curry does look good.
