Tomato Chutney








Hi
For the third day of blogging from my fellow blogger Kamalika's blog for Blogging marathon #20, I decided to go with chutney. Yummy, tasty, delious chutney and goes very well with Arsi upma!!

INGREDIENTS
Tomatoes    4
Green chillies   2-3
Oil               1tbsp
Mustard       1tsp
Asafoetida    1/4 tsp
Salt to taste

PREPARATION
Blend the tomatoes and the green chillies till smooth
Heat oil in  a pan and add mustard seeds
When it splutters add the asafoetida and the pulp. Add the required amount of salt.Mix well and continue to cook in a lo w flame till the moisture is absorbed. Serve hot with arsi upma.....yumm yumm

Eggless Microwave Brownie


 For the second day Of BM#20 I chose to cook these brownies from Kamalika's blog.Yes you read it correct, cook not bake;-) Can you imagine that you can get a dessert in just few minutes???well, hop over to Kamalika's blog to see some wonderful recipes
INGREDIENTS
All purpose flour    1 cup
Cocoa powder       3tbsp
Condensed milk      200 gms
Butter                    1/2 cup
Baking powder       1/4 tsp
Ripe banana            1
Salt                      a pinch
Sugar                   2tsp
Walnuts                2tbsp

PREPARATION
Melt the butter in microwave for 1 minute.Mix the condensed millk with this and blend it smooth.
Now add the mashed banana to this and mix well.Add sugar and blend well again
In another bowl, sift the flour,baking powder and salt.
Add the dry ingrdients to the butter mixture and blend well
Transfer this to a greased microsafe dish(could use butter paper too)
Microwave it for 4 minutes in MICRO HIGH MODE
Let it   REST FOR 2 MORE MINUTES
cut and serve the brownies!!!1
NOTE: THE TIMING WILL CHANGE FROM EACH MODEL OF THE MICROWAVE.

Thirattipaal

 Hi
My daughter loves Thirattipaal and especially Aavin's..and when i cooked this from Kamalika's blog for blogging Marathon#20 week 4...My daaughter said"Nothing like home made"!!!!!She made my day:-)
Here is a very easy way to prepare the traditional sweet

INGREDIENTS
Milk    1lt
Sugar  1/4 cup
Yogurt  1tsp
PREPARATION

Boil the milk in a heavy pan. When it starts to boil, reduce the heat and let it simmer till it becomes 1/4 its volume
Keep stirring regularly or it will stick to the bottom of the pan
Add sugar when it has thickened enough and mix well.Continue heating
Now add a tsp of yougurt to this and mix well
Continue to simmer till the required consistensy is achieved
Yummy Thirattipaal is ready!!

Eggless Cheddar Cheese Biscuits

When I was blog hopping , i came across these savoury biscuits from Uma's blog and had bookmarked them. For this week of Avant Garde Cookies, When Anusha of Tomato Blues told me the secret ingredient as Cheese, I knew i would bake this:-)
INGREDIENTS
All purpose flour   1 cup
Cheddar cheese     3/4 cup
Milk                     2-3 tbsp
Softened butter     4 tbsp
Olive oil                1tbsp
Baking Powder      1tsp
Baking soda          1/4 tsp
Pepper powder      1/2 tsp
Sugar                   1/4 tsp
Slat                      1/4 tsp
PREPARATION
Preheat the oven to 200C/400F
Mix the flour, baking powder, baking soda, salt, sugar and pepper powder evenly
In a bowl add the softened butter, cheddar cheese, olive oil and mix well.
To this mixture slowly add the dry flour mixture  and mix well.
You can now add the milk to form a soft dough.Knead it very lightly.
Grease a baking tray with butter
Pinch small balls out of this soft dough and flatten a littl
Arrange each of these few inches apart.
Bake for 15 minutes(Te lower portion starts to brown)
Let it cool on a wire rack
Store in air tight container
Serve these yummy flaky biscuits with a soup of your choice

Rava Idli

Today is the third day oh my posting for Blogging Marathon#20 with the theme Low Cal/Low fat breakfast and rava idli is one of that. Though Sometimes I do buy the store bought mix, but this recipe from Tarla Dalal  is very easy to prepare and very tasty too.

INGREDIENTS
Rava           2 1/2 cups
Buttermilk   4 cups
Oil              3tbsp
Salt            to taste
Ingredients
For tempering
Mustard seeds      1tsp
Black gram dal     1tsp
Bengal gram dal    1tsp
Curry leaves         few
Green chillies        2
Fruit  salt            1tbsp
Oil                     1tsp

PREPARATION
Mix the rava, buttermillk, oil and salt together in a bowl.Let it rest for 30 mins
Heat the oil for tempering and add the mustard seeds. Once it crackles add all other ingredients under tempering and pour it over the mixed batter,
Grease the idli mould and keep it ready
Add fruit salt to the batter and sprinkle a little war water on it. It will start bubbling, now mix the batter gently
Pour a spoonful of batter into the greased idli moulds and steam for 10 minutes
Serve warm with Coconut chutney and Idli milaga podi

Broken Red Rice Upma



Hi
For the second day of BM#20 and with the theme of Low cal/ Low fat breakfast, i have cooked the red rice upma.As cooked with red rice , it is very tasty and very low on calorie too.

INGREDIENTS
Broken Red Rice   1 cup
Water                   2 cups
Oil                       1 tsp
Mustard               1/2 tsp
Urad dhal              1/2 tsp
Asafoetida             1/4 tsp
Red chillies             4-5
Curry leaves           4
Coconut Scrapping few tbsp(optional)
Salt                       to taste

PREPARATION
Heat a pan with oil.
Once the oil is sufficiently hot, add the mustard seeds.When it splutters, add the urad dhal, asafoetida, red chillies and curry leaves.Saute for a minute
Transfer this to a rice cooker
Now add the required quantity of water with the salt
Now put the washed broken rice into ths. Mix well
Add the coconut scrapping
Now put it in cook mode till done
Serve hot with Tomato chutney

Whole Wheat Tomato Bread

 HI
For the third week of BM#20 I chose the theme Low cal/Low fat breakfast.And Bread does feature in the breakfast Menu.My daughter loves to eat home baked breads and This bread is very tasty and very healthy as it baked with whole wheat.
INGREDIENTS
Whole wheat flour 3 cups
 Tomato Puree 1/3 cup
 Tomato Ketchup 3 tbsp
 Warm water 2/3 cup
 Yeast 2 1/2 tsp
 Sugar 1tbsp
 Salt 3/4 tsp
 Red Paprika 2-3 tsp(or less)
 Oregano 2tsp
 Mixed Herb Seasoning 2 tsp
Olive Oil 2 tbsp
 Butter to grease the bread mould


PREPARATION
Mix the sugar in the warm water. Add yeast to this and let it prove for 10 mins in a warm place
 Meanwhile Mix the flour,salt,spices in a large mixing bowl.
 Make a well in the center and add the puree, ketchup and olive oil to this.
Add the frothed up yeast too and slowly combine everything to form a dough.
Transfer this dough to a floured board and start kneading it till it forms a soft pliable dough(knead for  nearly 5-6 minutes)
 Cover it and and keep it in a warm place for it to rise till it is double in volume(nearly 45 minutes)  After the first rise, knock it down and knead for another minute.
 Shape the dough into a loaf and place it in a greased loaf pan(9*5").
Cover it with a kitchen towel and let it rise again for 45 minutes
 Preheat the oven to 190C
 Brush the loaf with milk and bake for 20 minutes
After 20 minutes reduce the temperature to 160C and bake for further 15-20 minutes
Take it out of the oven,brush it with butter and place it on a wire rack to cool down
Serve warm with Salsa.

Baking Partners- A new Baking Group


 A group of home bakers helping each other to achieve perfection.


Baking a home made Baking a homemade bread, cake or cookies will give the best outcome.However in order to achieve the best results, a perfect recipe and right techniques are required.

We are a small group of home baker friends, who love and want to learn more about the nook and corners of baking. We are planning to try out recipes from books/magazines and cooking shows. Every member gets a chance to present their choice of recipe and share important points with the rest of the group.

Main purpose of this group is to learn the techniques, critic the procedure if there are ways to improve, and to eat a delicious food.

Rules are simple, we will choose one recipe and send it out to the group by 16th of every
month and the reveal date will be 15th of the next month. On that day we will blog about it. A linky tool will be open during that time and each member can link their post.


First month we are going to do a recipe, 2nd and 3rd month will be a theme and the 4th month we will be back at a recipe. By doing in between recipes, we will able to learn more.

Ulundu Kozhukattai-Vinayaka chaturthi special

 Hi
For the week 1 of Avant Garde Cookies for the month of september. I am continuing with the chaturthi recipes and today is the  savoury kozhukkattai.


INGREDIENTS
For the covering
Rice flour 1 cup
Water 1 cup
Salt 1/2 tsp
Oil 2 tsp
FOR THE FILLING
 Urad dhal       1/2 cup
Green chillies    2
Coconut scrapping    2-3 tbsp
Lemon   juice               2tsp
Salt                        to taste
Oil                     2tsp
Mustard             1tsp
Asafoetida          1/4 tsp

PREPARATION
FOR THE FILLING
Soak the black gram dhal in water for 1 hour
Drain all the water and cook it in cooker upto 3 whistles or till done
Grind it into a coarse paste along with chillies, salt..
Add oil in the frying pan.
Add the mustard and when it splutters add the green chillies, dhal, curry leaves and asaforida
Now add the ground paste to this and saute till it becomes a little dry.Squeeze the lemon into this and mix well.
Sprinkle the coconut on this,mix and let it cool.

FOR THE COVERING
Take a microwave safe bowl. Add water, salt and oil to it. Close with a microwave safe lid and microwave it on HIGH for 2 minutes.

Remove the lid and add the rice flour and mix thoroughly without lumps.Close with the lid and again microwave it for 1minute in MEDIUM HIGH mode.
Take it out and see if all the moisture is absorbed or else cook for another 30 secs

I HAVE USED MICROWAVE COOKING FOR THIS PART. YOU CAN ALSO USE THE TRADITION WAY OF DOING THIS IN THE STOVE TOP MODE


Let it cool. sprinkle a little water and knead into a smooth dough.
Pinch small balls from this. Flatten each into a circle.
Keep little filling inside this on one half of the circle
Close it like a half circle
Steam till done
Savoury Prasadam ready!!

Paal Kozhukattai-Vinayaka Chaturthi Special

For the third day of chaturthi special for blogging Marathon#20, I cooked Paal kozhukattai.These are the same mini kozhukkatai cooked in milk and comes under the payasam category

INGREDIENTS
Milk      1 lt
cardamom powder   1/2 tsp
Saffron                   few strands
sugar                      1/4 cup(add more if you need more sweet)
FOR THE MINI KOZHUKATTAI
Rice flour 1/2cup
Water 1/2 cup
Salt  a pinch
 Oil 2 tsp
PREPARATION

FOR THE KOZHUKATTAI
Take a microwave safe bowl. Add water, salt and oil to it. Close with a microwave safe lid and microwave it on HIGH for 2 minutes.

Remove the lid and add the rice flour and mix thoroughly without lumps.Close with the lid and again microwave it for 1minute in MEDIUM HIGH mode.
Take it out and see if all the moisture is absorbed or else cook for another 30 secs

I HAVE USED MICROWAVE COOKING FOR THIS PART. YOU CAN ALSO USE THE TRADITION WAY OF DOING THIS IN THE STOVE TOP MODE


Let it cool. sprinkle a little water and knead into a smooth dough.

Make small, tiny balls and keep aside.

Boil the milk in a pan and when it begins to boil, add the mini kozhukkatai to it.
Cook for around 10 minutes in very slow flame
Add saffron and cardamom powder to this aand mix well
Add sugar , mix well and switch of the heat
Pall kozhukattai is ready to be savored

Ammini Kozhukattai / Savoury kozhuattai -Vinayaka chaturthi special

For the second day of Blogging marathon#20, with the theme of "Chaturthi special",it is the savoury mini kozhukattai today.Here the covering dough is made into very smalls balls , steamed and then mixed with a savoury paste.
INGREDIENTS

FOR THE MINI KOZHUKATTAI
Rice flour 1 cup
Water 1 cup
Salt 1/2 tsp
Oil 2 tsp
FOR THE SAVOURY PASTE
Urad dhal       1/2 cup
Green chillies    2
Coconut scrapping    2-3 tbsp
Lemon   juice               2tsp
Salt                        to taste
 FOR THE TEMPERING
Oil 1 tbsp
Mustard seeds 1 tsp
Black gram dhal 2 tsp
Asafoetida 1 tsp
Green chillies 2 (chopped)
Black gram dhal 1 tsp
Curry leaves few
 PREPARATION

FOR THE KOZHUKATTAI
Take a microwave safe bowl. Add water, salt and oil to it. Close with a microwave safe lid and microwave it on HIGH for 2 minutes.

Remove the lid and add the rice flour and mix thoroughly without lumps.Close with the lid and again microwave it for 1minute in MEDIUM HIGH mode.
Take it out and see if all the moisture is absorbed or else cook for another 30 secs

I HAVE USED MICROWAVE COOKING FOR THIS PART. YOU CAN ALSO USE THE TRADITION WAY OF DOING THIS IN THE STOVE TOP MODE


Let it cool. sprinkle a little water and knead into a smooth dough.

Make small, tiny balls and keep aside.

You can steam them in the microwave itself or steam it in the stove top mode.I use the stove top method to steam and steam it till cooked(7-10 minutes)

Now add the groung paste to this and saute till it becomes a little dry.Squueze the lemon into this and mix well.
Add the steamed mini kozhukattai to this,and mix well.
Sprinkle the coconut on this , mix and serve

Vella Kozhukattai / Sweet Modak - Vinayaka chaturthi special

For the second week of Blogging Marathon , I chose to go with Chaturthi recipes.
Think of Ganesha and the name that immediately pops up in our mind is the Modak...the steamed sweet offered to the elephant god a favourite of many!!!
Sweet modak has the coconut jaggery stuffing and the covering is the made from rice flour

INGREDIENTS
FOR THE COVERING
Rice flour 1 cup

Water 1 cup

Salt 1/2 tsp

Oil 2 tsp


FOR THE FILLING

Coconut scrapping 1 cup

Powdered Jaggery 3/4 cup - 1 cup

Water 1 tbsp

Cardamom powder 2 tsp

PREPARATION OF THE FILLING
In a pan mix both the coconut and jaggery and cook it on medium flame.Add the cardamom powder and stir well. In the beginning the jaggery tends to become liquid, on further cooking the moisture is absorbed and it becomes a homogeneous mixture. When all the moisture is absorbed, remove from fire and let it cool. Make small marble sized balls out of this and keep aside

PREPARATION OF THE COVERING

Take a microwave safe bowl. Add water, salt and oil to it. Close with a microwave safe lid and microwave it on HIGH for 2 minutes.

Remove the lid and add the rice flour and mix thoroughly without lumps.Close with the lid and again microwave it for 1minute in MEDIUM HIGH mode.
Take it out and see if all the moisture is absorbed or else cook for another 30 secs

I HAVE USED MICROWAVE COOKING FOR THIS PART. YOU CAN ALSO USE THE TRADITION WAY OF DOING THIS IN THE STOVE TOP MODE


Let it cool. sprinkle a little water and knead into a smooth dough.

Pinch small balls fro this dough.
Flatten each in a little and make it in a cup.
Keep a small ball of the stuffing inside and pinch the edges of the cup.
now bring all the edges into a tip  closing the modak
Make all the modaks this way
Steam them till done
Prasadam for Ganesha is ready!!!

Eggless chocochip Date Muffins

For the 3rd day of Blogging Marathon with theme chocolate, I decided to bake these muffins. Today being 5th of september, I wanted to bake an eggless dish since this post is particularly Dedicated for my teachers!!!I have been blessed by 2 most wonderful people who happened to teach me 20 yrs back and who still have the same connect with me even though I haven't seen them for the last 20 yrs. I am so lucky to be in touch with them who have helped children by not only teaching but shaping up their character as well.
THANK YOU MADHUKAR SIR AND UMA MAM FOR BEING who you are!!!!!

I had bookmarked these wonderful muffins from Sharmispassion
INGREDIENTS
All purpose four      1cup
Sugar                     1/2 cup
Dates                     20
Butter                    2 1/2 tbsp
Oil                        1tbsp
Milk                      1cup
chocochips            1/2 cup
Baking Powder      1/2 tsp
Baking soda            1/2 tsp
Vanilla                     1/4 tsp


PREPARATION
Chop the dates and soak them in 1/4 cup of hot milk for 15 minutes. Then grind it into a paste and keep aside
Seive all purpose flour, baking powder, baking soda well  and keep aside
Cream butter , oil and sugar till it becomes creamy. To this add the ground date paste and mix well
Add the remaining milk and whisk till it becomes a uniform mixture
To this add the vanilla and again mix well
Slowly add the dry ingredients to form a homogenous mixture
Mix in the chocochips
Preheat the oven to 180C
spoon in the mixture upto 3/4th  in to the lined muffin mould
Bake for 20-25 minutes or till done
Serve warm or cold
I must say that these are not that over sweet, very very soft muffins
