Eggless Dinner rolls

I think I just need an excuse to bake bread and The group Baking Partners seemed to be the best excuse for me:-). For this month Swathi suggested that we make dinner rolls and the challenge is to try the different shapes to make it more interesting. She gave us two recipes of which one is from King Arthur Flour Website and the substitution which she suggested for potato flakes(As it is unavailable here) is mashed potatoes . Though I was very apprehensive about using potatoes in breads, I must say , the rolls turned out to be very soft with a mild potato flavour
INGREDIENTS
All purpose flour     3 1/2 cups
Instant Yeast          2 tsp
Milk                      2/3 cup
Sugar                    2 tbsp
Salt                       1tsp
Soft Butter              4 tbsp
Mashed Potato        3/4 cup
PREPARATION

Pressure cook the potatoes till soft. Peel it and mash well and keep it asde
In a large bowl add the flour, sugar, yeast , salt, mashed potato and butter.Mix well
Now add the lukewarm milk and knead it into a soft dough
Transfer this dough to a cutting board and knead for around 10 minutes till it forms a very soft pilable dough.
Cover with a kitchen towel and let it rise for nearly 45 mins so that it doubles in volume
Pinch even sized balls from this dough and make Rosette, Lion house rolls and Knot rolls

Place these apart on a well greased tray. Cover it with a kitchen towel and let it rise again for 45 minutes
Preheat the oven to 200C
Brush these rolls with milk  and bake them for 15-20 MINUTES or till they start to brown on the top
Brush the warm buns with melted butter and serve!!

Strawberry Banana Smoothie

 Hi
This smoothie is certainly a welcome change after gorging on all the fried diwali snacks.Shaky Breaky is the theme for week 1 of Avant Garde cookies and I whipped up this smoothie for this mornings healthy breakfast

INGREDIENTS
Fresh Strawberry    10
Banana                    1
Yogurt                    1 cup
cold milk                 1 cup
Mint leaves              few
Honey                     1tbsp
Sugar                   1tbsp(optional)
PREPARATION
Blend everything together well.
Serve cold in a glass garnished with mint springs

Garlic Bread Sticks-Almost domino Style

After a gap of around 2 months i am back to blogging again .Initially it was due to my health and later it was a little bit of laziness.Well!As usual my daughter pulled me out of this cycle by asking me to bake her favourite Garlic Bread. She is an ardent fan of Domino's  and their garlic bread makes it way into my house every month without fail. As I had bookmarked this recipefrom Divya, I decided to bake this and please my daughter:-)
INGREDIENTS
Recipe Source: Easy Cooking

All purpose flour  1 1/2 cup(TO BE DIVIDED AS 1 CUP AND 1/2 CUP)
Yeast                   1/2 tsp
Water                  1/2 cup
Sugar                  1/2 tsp
Salt                      1/2 tsp
Garlic Paste          1/2 tsp
Olive Oil               2 Tbsp(TO BE DIVIDED AS 1TBSP+1TBSP)
Italian Seasoning  1tbsp(I used domino seasoning)
Mozarella Cheese  2 tbsp
Butter                  to grease the tray

PREPARATION
Warm the water for 15 secs in microwave. Add sugar and yeast to it. Keep it in a warm place to froth up for around 10-15 minutes
In a bowl mix the olive oil with 1cup of flour
Mix in the yeast mixture to this
Mix all these into a very sticky dough and let it rest for 1hr for it to double
Once it has doubled, punch it down a little, add the rest of flour, garlic paste and salt and knead.

Transfer this dough to  wooden board and knead for around 10 minutes to form a soft pliable dough.Keep covered in a warm place for it to double for around 45 minutes



 Now roll it into a circle not very thin, Spread the grated cheese on it
Now fold over like a semicircle and roll it slightly to seal the edges
Transfer this to a greased baking sheet
Apply the remaining 1Tbsp oil on it

Preheat the oven to 200 C

Cut into strips using a pizza cutter

Bake for about 14-15 minutes
Enjoy the warm garlic bread with cheese dip

The bread is definetley almost like Domino's....Yummy, soft delicious
